When enterprise proprietor Jim Dawe acquired the old Odd Fellows building in downtown Berthoud, he attempted to ask his older brother Rob to start an eating place there. The result of Jim’s convincing opened July 3 at 335 Mountain Ave as Bradford’s Grub & Grog, a restaurant, and bar Rob owns with three companions. “Jim is the catalyst in the back of all of this,” said Rob, who lives in Denver and co-owns four restaurants there and felt Berthoud become too distant to pressure for any other eating place. “He attempted to speak me into doing a restaurant, and I tried to talk him out of it.”
Rob determined to sign up for Jim in his imaginative and prescient while the rent ended on his co-owned Aurora restaurant, McCabe’s Bistro & Pub, and he had an extra eating place device and furniture. He additionally had visited Berthoud sometimes and observed he cherished the town. “I love the United States of America metropolis experience of Berthoud, and most of our clients can walk to the restaurant,” Rob stated. Jim acquired the Odd Fellows building 18 months ago and converted the top floor into a separate business, Hale & Bradford Stillhouse, to serve Hale & Bradford distilled bourbon, vodka, rum, and gin. Cocktails made with the spirits and neighborhood beers and wine are served downstairs.
The tasting room opened in October 2018, and the plan was to launch the restaurant that same year; however, the construction wanted more paintings than the Dawes expected. “We ended up having to strip the whole lot, which became part of the postponement,” Rob explained. The construction was constructed in 1901, and the floors and the electric and plumbing systems needed to be replaced because of their age. Walls needed to be moved, so the only vicinity left status became the kitchen’s hood system and floor. The restrooms have been moved to the lower back to open up the principal restaurant area, and a bar turned into a mount that, with eating seating, added 60 seats.
“We restored it to its original self,” Jim said. “It’s taken a while, but we returned to the bare wood ground and brick partitions. It took slightly longer than anticipated because we desired to recover the building completely.” While recuperation paintings were underway, white and crimson bricks were found and retained to create a surrounding of exposed brick walls. The salad bar is framed in beetle-kill wooden, and wooden and metal add to that ecosystem. “We pulled everything off,” Rob said. “The stuff that looked top we kept.”
Rob determined an all-scratch menu and American home-style cooking. He doesn’t freeze whatever and uses sparkling components, regionally sourcing everything he can. His menu selections include crimson-brick chicken, fried chicken, steaks and burgers, and pit-smoked barbecue Friday to Sunday, consisting of brisket, ribs, and sausage. There are also appetizers, salads, sandwiches, entrees and massive plates, everyday fish and soup specials, and a salad bar customers can eat as a meal or get to-go. The menu items come from recipes owned by one of Rob’s companions, Tim Bryan — his other partners are Colm and Christine O’Neil.
“I like how we’re doing most the whole lot from scratch,” said Steven Kean, preferred manager and chef for Bradford’s and previously government chef for one of Rob’s restaurants, Casey’s Bistro & Pub, for four years. “We’ve had proper consumer reaction to this point. People truely just like the comfort meals factor of it, the huge quantities of it.” Rob is also pleased with the consumer reaction. “So far, it’s been an amazing response,” Rob stated, including with Hale & Bradford upstairs; some clients prevent in for a cocktail while there may be a wait. “We couldn’t be happier. We’re very humbled by the reception the town has given us. They seem very excited.”
